Minestrone With Tortellini - cooking recipe
Ingredients

1 1/2 lb. Italian sausage (casings removed)
1 c. chopped onion
6 c. beef broth
1/2 c. dry red wine
1 lb. can tomatoes
2 c. sliced carrots
1 c. celery, thinly sliced
1 c. ketchup
1 tsp. Italian seasoning
2 cloves sliced garlic
2 c. zucchini
1/2 lb. frozen cheese tortellini
1 medium green pepper, chopped
1/4 c. chopped fresh parsley
grated Romano cheese
1/2 tsp. garlic powder
Preparation

Break sausage into small pieces.
Cook in large pot over medium heat.
Remove and drain.
In same pot, saute onions until tender.
Add garlic powder, beef broth, wine, tomatoes, carrots, celery, ketchup and Italian seasoning.
Bring to boil and simmer, uncovered, for 30 minutes.
Skim fat.
Stir in rest of ingredients.
Simmer, covered, for 35 to 40 minutes until tortellini is tender.
