Mashed Potato Candy - cooking recipe

Ingredients
    1 medium size potato
    1/2 tsp. vanilla
    powdered sugar
    peanut butter
Preparation
    Boil potato, unpeeled, until well done.
    Peel and mash.
    Add vanilla and enough sugar to form a heavy dough.
    Knead lightly on a floured surface sprinkled with the sugar.
    Roll out on surface until about 1/4-inch thick.
    Spread on peanut butter.
    Roll up like a jelly roll.
    Chill.
    Slice and refrigerate until firm.
