Ingredients

1 c. sugar
2 Tbsp. vinegar
3 egg yolks
2 c. water
2 Tbsp. flour
1/2 tsp. lemon extract or juice
small lump of butter
3 egg whites
3 Tbsp. sugar
pinch of salt
Preparation

Cook sugar, egg yolk, vinegar, water and flour until thickened and smooth.
Before removing from heat, stir in butter and lemon extract. Pour into baked pie shell.
Top with meringue made with the 3 egg whites, salt and 3 tablespoons sugar.
Brown in moderate oven.
