Eggplant Casserole - cooking recipe
Ingredients

1/2 c. butter or margarine
2 medium to large eggplant, peeled and chopped
1 lb. ground beef
1 link smoked sausage, diced
4 slices bacon, chopped and cooked
2 c. cooked rice
1 large onion, chopped
1 large bell pepper, chopped
1 hot pepper, chopped (optional)
salt and pepper to taste
bread crumbs
Preparation

Saute chopped vegetables in butter until soft.
In large pot, brown beef and sausage and add bacon.
Cook until meat is blanched.
Add salt and pepper to taste.
Add vegetable mixture to meat mixture; cook 15 to 20 minutes over low heat.
Add rice, using small amount at a time; don't make dressing runny.
Put in casserole dish.
Top with bread crumbs and bake 15 to 20 minutes at 375\u00b0, uncovered.
