Red Potato Casserole - cooking recipe

Ingredients
    4 oz. (6 slices) bacon (save grease)
    1 1/2 lb. red potatoes, grated matchstick size
    1/2 lb. fresh green beans, cut into 1-inch pieces
    1 c. thinly sliced onion (1 large)
    2 c. sliced fresh mushrooms
    1 1/2 c. shredded Cheddar cheese
    1 tsp. dried dill weed
    salt and pepper to taste
Preparation
    Cook bacon.
    Drain.
    Reserve fat and crumble.
    Boil 2 quarts water.
    Blanch potatoes and beans together for just 2 minutes. Drain well and place in large mixing bowl.
    Add reserved bacon fat to potatoes and beans and toss.
    (Should be 3 tablespoons.
    Add oil to equal if not enough.)
    Add onion, mushrooms, cheese, dill, salt and pepper along with crumbled bacon and combine.
    Turn into greased 7 x 11-inch baking dish.
    Bake 30 minutes at 425\u00b0.
    Serve warm.
    Makes 6 servings.
