Pepper Steak - cooking recipe

Ingredients
    3 c. cooked rice
    1 lb. flank or round steak
    1 Tbsp. paprika
    1 Tbsp. butter
    2 Tbsp. cornstarch
    2 large fresh tomatoes, cut in 1/8
    1/4 c. water
    1/4 c. soy sauce
    2 peppers, cut in strips
    1 c. sliced onion
    1/2 c. beef broth
    2 cloves garlic, crushed
Preparation
    Pound steak to 1/4-inch thickness.
    Cut in 1/4-inch wide strips.
    Sprinkle with paprika and allow to stand.
    Brown meat in butter.
    Add garlic and broth.
    Cover and simmer 30 minutes. Stir in onions and green peppers.
    Cover and cook 5 minutes. Blend cornstarch, water and soy sauce.
    Stir into meat mixture and cook, stirring until clear and thickened, about 2 minutes.
    Add tomatoes and stir gently.
    Serve over rice.
    Makes 6 servings.
