Miniature Cherry Cheesecakes - cooking recipe
Ingredients

2 doz. vanilla wafers
2 (8 oz.) pkg. cream cheese
1 Tbsp. fresh lemon juice
1 (1 lb. 5 oz.) can cherry pie filling
3/4 c. sugar
2 eggs
1 tsp. vanilla
Preparation

Soften cream cheese in a bowl.
In 2 dozen muffin tins, place paper liners.
In the bottom of each liner, place a vanilla wafer. Gradually add sugar to softened cream cheese.
Mix in juice and vanilla.
Beat in eggs, one at a time, until light and fluffy. Spoon into liner.
Bake in a 375\u00b0 oven just until set, about 15 minutes.
Remove cheese cake from muffin tins.
Do not remove liners.
Top each cheesecake with about 1 tablespoon pie filling. Refrigerate or freeze until ready to serve.
