Lemon Delight - cooking recipe
Ingredients

1 scant c. sugar
1/4 c. lemon juice
rind of 1 lemon
3 egg yolks
3 egg whites
1/2 pt. whipping cream
vanilla wafers, crushed (to cover top and bottom of greased dish)
Preparation

Combine sugar, lemon juice, rind and egg yolks.
Cook in double boiler until thick.
Beat egg whites and whipped cream into cooled custard.
Pour into dish (which has layer of crumbs).
Then sprinkle more crumbs on top.
Freeze.
Take out a few minutes before serving.
Serves 6 to 8.
