Italian Meat Loaf - cooking recipe

Ingredients
    2 lb. lean ground beef
    2 eggs, lightly beaten
    1 c. soda crackers
    1/2 c. grated Parmesan
    1/2 c. chopped onion
    1 1/2 tsp. salt
    1 tsp. oregano
    1 (8 oz.) can pizza sauce
    3 slices Mozzarella cheese
    green pepper rings
    sliced mushrooms
    2 Tbsp. butter or margarine
Preparation
    Mix beef, eggs, crumbs, milk, Parmesan cheese, onion, salt and oregano.
    Shape into loaf and place half in greased 9 x 5 x 3-inch loaf pan.
    Put Mozzarella over top and spread rest on top. Bake 1 1/4 hours.
    Spoon sauce over the loaf and more Mozzarella cheese. Return to oven until melted.
    Yields 8 to 10 servings.
