Rattlesnake Chili(Serves 6) - cooking recipe
Ingredients

2 Tbsp. oil
1/2 c. chopped onion
1/2 c. green peppers
1 clove garlic
1 lb. lean ground beef
1 c. cubed rattlesnake meat
2 Tbsp. chili powder
2 tsp. salt
1 tsp. cayenne pepper
2 (16 oz.) cans tomatoes, undrained
6 oz. can tomato paste
2 c. water
2 cans red kidney beans
Preparation

Heat oil and saute onion, green peppers and garlic until tender, but not brown.
Add beef and rattlesnake.
Brown and cook until done, about 15 minutes.
Stir in spices, beans, tomatoes and paste.
Bring to a boil, then reduce heat.
Add water and return to a boil.
