Black-Eyed Pea Salad - cooking recipe
Ingredients

16 oz. pkg. black-eyed peas, cooked
2 c. chopped tomatoes
1 c. chopped green peppers
1/2 c. chopped onion
1/2 c. rice vinegar
2 tsp. sugar
Preparation

Cook peas according to directions; drain and refrigerate.
In medium bowl, combine peas, tomatoes, green pepper and onion; mix well.
Combine vinegar and sugar; pour over pea mixture and toss. Chill at least 30 minutes before serving.
Makes 4 to 6 servings.
