Microwave Turkey Meat Loaf - cooking recipe

Ingredients
    2 lb. ground turkey
    1 box frozen chopped spinach, thawed and squeezed dry
    3/4 c. chicken broth
    3/4 c. uncooked quick oats
    1 c. shredded carrots
    1 c. sliced scallions
    whites from 2 large eggs
    2 Tbsp. poultry seasoning
    1 1/2 tsp. salt
Preparation
    Mix all ingredients in a large bowl with hands or spoon until blended.
    Place a 4-ounce glass custard cup, right side up, in the center of a 9-inch deep dish microwave-safe pie plate.
    Place turkey mixture in a ring around custard cup.
    Loosely cover turkey mixture with waxed paper.
    Microwave on High 12 to 15 minutes, rotating dish 1/4 turn every 4 minutes, until meat is opaque at center, no longer pink and thermometer registers 160\u00b0.
    Remove from oven and let stand 5 minutes to finish cooking.
