Chicken Loaf - cooking recipe

Ingredients
    4 c. diced cooked chicken
    3 Tbsp. grated onion
    4 Tbsp. chopped pimento
    1 1/2 tsp. salt
    1 1/2 tsp. chili powder
    2 c. cracker crumbs
    1 1/2 c. chicken stock
    1 1/2 c. milk
    3 eggs, beaten
Preparation
    Combine all ingredients in the order given.
    Mix thoroughly. Prepare a loaf pan by oiling thoroughly, then coating with cracker crumbs.
    Fill with chicken mixture.
    Set pan in a pan containing about 2 inches of hot water.
    Bake at 350\u00b0 for 1 hour, or until a knife inserted comes out clean.
    Serve hot with olive sauce or cold with Hollandaise sauce.
    Serves 8 to 10.
