Smoky Venison Burgers - cooking recipe
Ingredients

1 1/2 lb. trimmed venison chunks
1/2 lb. uncooked bacon
1 Tbsp. Worcestershire sauce
1 tsp. salt
1/2 tsp. dry mustard
1/2 tsp. thyme
1/2 tsp. black pepper
1 clove garlic, minced
Preparation

In a food processor, chop the venison and the bacon to medium fineness.
In a large bowl, mix the meat with the remaining ingredients.
Divide into 6 portions and form into patties while you prepare the grill.
When coals are ready, toss in four soaked wood chunks.
Position and fill the water pan.
Position the grate and arrange patties over water pan.
Cover grill, adjusting vent holes for outside temperature.
After a half hour, rotate and flip the burgers.
Cook 30 to 45 minutes longer, until desired doneness. Makes 6 servings.
