Cranberry Surprise Corn Muffins - cooking recipe

Ingredients
    1 c. enriched cornmeal
    1 c. all-purpose flour
    1/4 c. granulated sugar
    4 tsp. baking powder
    1/2 tsp. salt
    1 c. milk
    1 egg
    1/4 c. vegetable oil
    1/2 c. cranberry-orange relish
Preparation
    Heat oven to 425\u00b0.
    Grease 12 medium muffin cups.
    Combine cornmeal, flour, sugar, baking powder and salt.
    Combine milk, egg and oil; add to dry ingredients, mixing just until dry ingredients are moistened.
    Fill prepared muffin cups 2/3 full.
    Place 1 1/2 teaspoons of relish in center of each muffin cup.
    With tip of spoon, press lightly into batter.
    Bake for 15 to 20 minutes.
    Cool 5 minutes in muffin pan; remove to wire cooling rack.
    Makes 1 dozen muffins.
