Plum Blossom Chicken - cooking recipe
Ingredients

6 large chicken breasts
2 Tbsp. butter
1 tsp. curry powder
1 tsp. Beau Monde (optional)
1 c. plum jam
1/4 c. cream sherry
1 lemon, thinly sliced
Preparation

Brown chicken breasts in butter in a heavy skillet.
Stir curry powder into pan juices; sprinkle Beau Monde over chicken. Blend jam and sherry.
Pour over chicken.
Place lemon slices on chicken breasts.
Cover and simmer 35 to 45 minutes.
Remove chicken to warm serving platter; boil pan juices to reduce slightly.
Spoon over chicken to serve.
