Light Crab Spread - cooking recipe
Ingredients

1/2 small onion
1 garlic clove
8 oz. soft cream cheese
1 Tbsp. skim milk
1 medium tomato, seeded
1/2 small green pepper
3/4 c. fresh parsley, divided
1 tsp. lemon juice
1/8 tsp. salt
4 oz. imitation crab meat, flaked
Preparation

Finely chop onion.
Press garlic.
Mix onions, garlic, cheese and milk until well blended.
Spread in baking dish.
Coarsely chop tomato and green pepper.
Snip the parsley.
Mix together tomato, green pepper, 2 tablespoons of parsley, lemon juice and salt. Spoon on top of cheese mixture.
Top with crabmeat.
Sprinkle with remaining parsley.
Chill.
Serve with bread or fresh veggies. Yields 12 to 15 servings.
