Ingredients

3 tart apples, peeled, cored and sliced 1/4-inch thick
2 Tbsp. lemon juice
4 1/2 Tbsp. butter, melted
4 tsp. sugar
2 c. fresh bread crumbs
1/4 c. firmly packed light brown sugar
1 Tbsp. all-purpose flour
1/8 tsp. ground mace
1/2 tsp. cinnamon
1 Tbsp. cognac
Preparation

Heat oven to 375\u00b0.
In a large bowl, toss apples with lemon juice.
Brush 4 (6 ounce) ramekins with 1/2 tablespoon melted butter and sprinkle sugar to coat.
In a small bowl, combine bread crumbs with remaining butter.
Add remaining ingredients to apples and toss.
Divide a third of the bread crumbs among the ramekins. Arrange half the apples over crumbs and another third of crumbs. Repeat with the rest of apples and crumbs.
Press into ramekins. Bake for 20 minutes.
Raise oven temperature to 450\u00b0 and continue baking until top browns and apples are tender.
Cool 5 minutes, loosen with knife, then turn out on plate.
