Colorful Corn Salad - cooking recipe

Ingredients
    2 (10 oz.) pkg. corn, frozen and thawed
    2 c. green pepper, diced
    2 c. sweet red pepper, diced
    2 c. celery, diced
    1 c. fresh parsley, minced
    1 c. green onions, chopped
    1/2 c. Parmesan cheese, shredded
    2 tsp. ground cumin
    1 1/2 tsp. salt
    3/4 tsp. black pepper
    1/2 tsp. hot sauce
    1/8 tsp. cayenne pepper
    3 Tbsp. olive oil
    2 cloves garlic, minced
    6 Tbsp. lime juice
Preparation
    In a large bowl, combine the first 12 ingredients (through cayenne pepper). In a microwave bowl, combine oil and garlic. Microwave on High for 1 minute. Cool. Whisk in lime juice. Pour over first mixture and toss to coat. Yields 16 to 18 servings. Cut in half for smaller crowd. Great with Mexican dishes.
