Skillet Scalloped Potatoes - cooking recipe

Ingredients
    4 to 5 medium potatoes, peeled and sliced thinly
    1 small onion, chopped
    3 Tbsp. margarine, melted
    1 c. boiling water
    1 (13 1/2 oz.) can evaporated milk
    1/2 tsp. salt
    1/8 tsp. pepper (to taste)
Preparation
    Saute potatoes and onion in margarine in a large skillet over low heat 3 to 4 minutes or until most of the margarine is absorbed.
    Add water and milk. Cook over low heat until potatoes are tender and sauce thickens, about 25 to 30 minutes. Stir occasionally. Add salt and pepper. Serve hot.
    Yields 6 servings.
