Creole Shrimp Salad - New Orleans - cooking recipe
Ingredients

2 c. shrimp, cooked, shelled and cut in 1/2-inch pieces
1 c. rice, cooked
1 c. cauliflower (raw), diced into 1/2-inch pieces
1/4 c. diced green pepper
2 Tbsp. diced pimiento
2 Tbsp. chopped green onions
1 tsp. salt
1/8 tsp. pepper
2 Tbsp. sliced, stuffed olives
1/2 c. mayonnaise
lettuce (for serving)
Preparation

Combine shrimp, rice, cauliflower, green pepper, pimiento and green onions.
Sprinkle with salt and pepper.
Toss lightly.
Pour mayonnaise and sliced olives over this mixture.
Toss until blended.
Taste for seasoning.
Serve in lettuce cup.
Garnish with ripe olives and green onions.
