Cranberry Delight Salad - cooking recipe

Ingredients
    1 (20 oz.) can crushed pineapple, juice drained and reserved
    1 c. water
    1 can whole cranberry sauce
    3 Tbsp. lemon juice or 3 Tbsp. orange juice concentrate
    1 tsp. grated lemon or orange peel
    1/2 tsp. nutmeg
    2 c. nonfat sour cream (16 oz.)
    1/2 c. chopped nuts
    1 (6 oz.) pkg. strawberry jello
Preparation
    Combine pineapple juice and water in a 2-quart saucepan; heat to boiling.
    Remove from heat; add gelatin and stir until completely dissolved.
    Stir in cranberry sauce, lemon juice, lemon peel and nutmeg.
    Chill until mixture thickens slightly.
    Add sour cream; stir until thoroughly combined.
    Fold in pineapple and nuts.
    Pour into an 8-cup mold or serving dish.
    Chill until firm. Keeps well.
    Serves 12 to 15.
