Eggplant Casserole - cooking recipe

Ingredients
    1 eggplant
    milk
    2 slices loaf bread
    2 eggs, beaten
    1 onion
    1 1/2 c. grated cheese
    bread crumbs
    salt and pepper
Preparation
    Peel and quarter eggplant.
    Boil in salt water until tender. Soak bread in milk.
    Mash eggplant with bread.
    Add beaten eggs, onion and salt and pepper to taste.
    Mix in cheese.
    Put in greased casserole dish.
    Sprinkle top with bread crumbs.
    Bake at 400\u00b0 for 30 to 40 minutes.
