Ingredients

1 gal. pears, peeled and cut into 1/4 to 1/2 pieces
5 c. sugar
2 c. water
4 c. vinegar
2 pieces ginger root
2 sticks cinnamon
2 Tbsp. allspice
2 Tbsp. whole cloves
red or green food coloring
Preparation

Place all spices in a cloth bag or nylon net.
Combine water, sugar, spices and vinegar in a pot and cook for 10 minutes.
Add pears and 1/2 bottle of food coloring (red or green).
Cook until pears are tender.
