Salmon Croquettes - cooking recipe

Ingredients
    1 lb. salmon, chopped fine
    1 c. cream
    3 Tbsp. flour
    1 Tbsp. butter
    1 beaten egg
    1 tsp. salt
    1 Tbsp. parsley, minced
    dash of cayenne pepper
    juice of 1/2 lemon
    bread crumbs
Preparation
    Combine salmon, salt, parsley, cayenne pepper and lemon juice. Place cream into a saucepan.
    Bring to a boil.
    Blend flour and butter; then stir into boiling cream.
    Cook for 2 minutes.
    Stir salmon mix in and season to taste.
    Mix well.
    Let cool.
    Form into croquettes; roll first in beaten egg, then bread crumbs.
    Fry in hot oil.
