Les Grives Aux Olives(Thrushes With Olives) - cooking recipe

Ingredients
    6 thrushes
    12 juniper berries
    32 black olives
    3 pinches thyme
    larding fat
    3 Tbsp. olive oil
    salt and pepper
    sliced bread
Preparation
    Pluck, singe and draw the thrushes.
    Put 2 juniper berries, 2 olives and half a pinch of thyme inside each bird.
    Lard and truss.
    Put the olive oil in a casserole and heat. Saute the thrushes in the oil for 15 minutes.
    Season with pepper and very little salt. Add the rest of the olives and heat for 3 minutes. Serve on slices of bread fried in oil.
