1 1/2 c. flour
3 Tbsp. sugar
1 Tbsp. baking powder
1/4 tsp. salt
1/8 tsp. nutmeg
2 large eggs (room temperature)
1 1/4 c. milk
1 1/2 tsp. vanilla
3 Tbsp. unsalted butter
Preparation

Whisk flour, sugar, salt and nutmeg. In another bowl, beat eggs. Whisk in milk and vanilla. Melt butter over medium heat. Whisk into milk mixture. Add wet to dry. Whisk until well blended. Add small amount of oil into preheated iron skillet and fry as usual. Makes 6 to 8.
