Zucchini Bread - cooking recipe

Ingredients
    3 c. flour
    1 1/2 tsp. baking powder
    1 tsp. baking soda
    1 1/2 tsp. cinnamon
    1 tsp. salt
    1/2 tsp. ginger
    1 c. chopped walnuts
    1 c. raisins
    3 c. grated zucchini
    1 c. oil
    1 1/2 c. sugar
    3 beaten eggs
    1 tsp. vanilla
Preparation
    Sift together the first 8 ingredients and stir to blend.
    To this mixture, add remaining ingredients.
    Beat mixture for 4 minutes, then place in one large or two small greased loaf pans. Bake at 350\u00b0 for one hour, or until done when tested.
    (I find it takes a little over an hour, using 2 loaf pans.)
    This freezes very well.
