Chicken Penne - cooking recipe

Ingredients
    1 tsp. olive oil
    1 c. chopped onion
    1/2 green pepper, chopped
    1 clove garlic, minced
    1 (14 oz.) can Italian style diced tomatoes
    1/4 lb. chicken breast, cubed
    2 Tbsp. dry red wine
    1 c. penne (uncooked)
    2 Tbsp. grated Parmesan cheese
Preparation
    Cook the pasta according to the package directions.
    Add the first 6 ingredients to a frying pan.
    Simmer for 30 to 45 minutes until chicken is cooked through.
    Drain the noodles and in a bowl mix with the tomato mixture.
    Sprinkle with Parmesan cheese and serve.
    Serves 2 (can be doubled easily).
