Sole With Garlic Sauce - cooking recipe

Ingredients
    1/3 c. butter
    1/4 c. finely chopped garlic (12 large cloves)
    1 lb. sole fillets
    salt and pepper
    1 egg
    1 Tbsp. water
    2 Tbsp. oil
    lemon wedges
Preparation
    In a small frying pan, melt 3 tablespoons butter over medium-low heat.
    Add garlic and cook, stirring occasionally, until garlic just begins to turn golden (15 minutes). Remove from heat and keep warm. Rinse fish and pat dry.
    Season with salt and pepper to taste.
