Cream Of Chicken And Mushroom Soup - cooking recipe

Ingredients
    3 Tbsp. butter
    1 small onion, chopped
    1 lb. mushrooms, sliced (exotic or domestic)
    1/3 c. flour
    4 c. chicken stock
    1/3 c. chopped fresh parsley
    1 1/2 c. half and half
    splash of white wine (optional)
    2 1/2 c. cooked chicken, diced
    1 Tbsp. fresh tarragon
Preparation
    In large saucepan, melt butter over medium heat.
    Add onion and cook until soft.
    Add mushrooms and cook for 10 minutes.
    Add flour; stir and cook for 1 minute.
    Add chicken broth, half and half and splash of wine.
    Cook over medium heat until mixture thickens and comes to a boil.
    Add salt, chicken and tarragon. Simmer, covered, for 20 minutes.
    Garnish with parsley.
    Makes 4 to 6 servings.
