Guilt Free Wickedly Chocolate Cake - cooking recipe

Ingredients
    2 c. flour
    2 c. sugar
    1 c. cocoa powder
    1 tsp. baking powder
    2 tsp. baking soda
    1/4 tsp. salt
    4 (2 1/2 oz.) jars baby food pureed prunes
    2 tsp. vanilla
    2 eggs, beaten ahead of time or substitute Egg Beaters
    1 c. skim milk
    2 Tbsp. instant coffee
    1 c. boiling water
Preparation
    Boil water, stir in coffee and set aside to cool.
    In mixing bowl, sift together flour, cocoa, soda, powder and salt.
    Stir until blended well.
    Add prunes (use every serid), vanilla, eggs and milk and stir just until blended.
    Gently stir coffee into batter.
