Potato Salad - cooking recipe

Ingredients
    3 beaten eggs
    1 1/2 c. sugar
    3 Tbsp. flour
    1 1/2 c. water
    1 c. vinegar
    6 Tbsp. butter or margarine
    1 1/2 tsp. salt
    1/8 tsp. pepper
    5 lb. new potatoes
    2 diced, hard-boiled eggs
    1 c. diced onion
    1 c. diced celery
Preparation
    Cook potatoes.
    Let cool and dice into small pieces.
    Combine in the order given:
    3 beaten eggs, sugar, flour, water and vinegar.
    Boil until thick, stirring constantly.
    When thick, add butter or margarine, salt and pepper.
    Add to potatoes and diced vegetables.
    Make day ahead; refrigerate.
    Stir every couple of hours.
    Serves 12.
