Ingredients

2 eggs, beaten
1 c. milk
3 Tbsp. melted butter
1 tsp. baking powder
1/2 tsp. salt
3/4 c. all-purpose flour
Preparation

In bowl, mix all ingredients except flour.
When blended, add flour.
Blend well.
Heat 8-inch skillet over medium heat.
Brush with shortening.
Pour batter 2 tablespoons at a time into skillet. Tilt pan to make a 6-inch round thin pancake.
Brown about 1 minute, then turn to brown on the other side.
Serve immediately with butter and syrup.
Makes 14 to 16 pancakes.
