Florence'S Eggplant Au Gratin - cooking recipe

Ingredients
    4 small eggplant
    2 large onions
    1 lb. sharp cheese
    2 eggs
    salt and pepper
    buttered crumbs
Preparation
    Peel and boil eggplant in salted water until soft.
    Drain and mash.
    Saute onions in butter.
    Beat eggs.
    Grate cheese.
    Combine ingredients; placs in a greased casserole.
    Cover with crumbs. Bake at 350\u00b0 for 40 to 45 minutes.
