Hot And Hearty Stew - cooking recipe

Ingredients
    2 1/2 lb. beef cubes
    2 Tbsp. all-purpose flour
    1 Tbsp. chili powder
    salt and pepper to taste
    3 Tbsp. shortening or lard
    1 clove garlic, minced
    2 onions, sliced
    1 (16 oz.) can tomatoes
    1/2 tsp. crushed red pepper (optional)
    2 c. potatoes, cubed
    2 c. carrots, chopped and cut into 1 to 2-inch
Preparation
    Coat beef in mixture of flour, chili powder and salt.
    Brown in hot shortening or lard in a large Dutch oven.
    Add onions and garlic.
    Cook until soft, then add tomatoes and crushed red pepper.
    Cover and simmer 2 hours, then add potatoes and carrots and cook until vegetables are done, about 45 minutes.
    Makes 6 to 8 servings.
