Smoked Turkey - cooking recipe
Ingredients

13 lb. broad breasted turkey
2 medium onions
3 celery stalks
salt and pepper
Preparation

Salt and pepper neck and chest cavities well.
Quarter onions and cut celery stalks into 9 pieces.
Stuff neck cavity with 2 quarters of onion and three pieces of celery.
Stuff chest cavity with remaining pieces of onion and celery.
Skewer cavities, legs and wings by tying to bird.
Salt and pepper very generously. Place on grill.
Turn 15 minutes to keep from burning.
Cook 10 minutes per pound.
