Vegetable Stir-Fry - cooking recipe

Ingredients
    2 Tbsp. vegetable oil
    1 medium clove garlic, cut in half
    2 carrots, cut diagonally into 1/4-inch slices
    2 stalks celery, cut diagonally into 1/4-inch slices
    1 green or red pepper, cut into 1/2-inch strips
    1 Tbsp. soy sauce
    salt and pepper to taste
    squash (optional)
Preparation
    Heat vegetable oil in wok or heavy skillet.
    Add garlic. Saute over medium heat until garlic is golden brown.
    Discard garlic; add carrots and celery.
    Stir-fry for 3 to 4 minutes or until partially cooked.
    Add onion, squash and green pepper. Stir-fry for 2 to 4 minutes or until vegetables are crisp-tender. Add soy sauce, salt and pepper; mix lightly.
    Makes 4 servings.
