Zucchini Souffle - cooking recipe

Ingredients
    1 qt. sliced zucchini
    1 small onion, minced finely (may omit)
    2 beaten eggs
    1 c. grated or finely chopped cheese (Cheddar is good)
    bread or cracker crumbs
    paprika
Preparation
    Saute onion and zucchini in a little butter until almost tender.
    Stir often; may need to add a bit of water.
    Take from fire.
    Add eggs and cheese (I usually use a mixture, whatever is in the refrigerator).
    Put in buttered casserole.
    Sprinkle with bread or cracker crumbs and a little more cheese.
    A little paprika will add flavor and color on top.
    Bake at 350\u00b0 until it bubbles and is brown on top.
