Sweet Potato Casserole For Microwave - cooking recipe

Ingredients
    3 medium sweet potatoes
    2 tart apples
    2 Tbsp. butter or margarine
    maple syrup
    1/2 tsp. cinnamon
    1/2 tsp. salt
    2 Tbsp. parsley
Preparation
    Peel and cook the potatoes; peel the apples, if desired. Slice the cooked potatoes 1/3 to 1/2-inch thick and thinly slice the apples.
    Toss together in a 2-quart casserole.
    In glass measure, microwave the butter (melt) and add enough maple syrup to make 1/3 cup.
    Add cinnamon and salt.
    Pour over potatoes and apples.
    Microwave, covered, until the apples are tender, 5 to 6 minutes.
    Sprinkle with parsley and serve.
    Makes 6 to 8 servings.
