Hollandaise Sauce - cooking recipe
Ingredients

3 egg yolks
6 oz. clarified butter
juice from 1/2 lemon
salt and pepper to taste
Preparation

Place the yolks in a stainless steel bowl and place over low heat, stirring constantly, until the yolks are thick and creamy. Remove the yolks from heat and slowly stir in the clarified butter, stirring vigorously.
Add the lemon juice, salt and cayenne pepper.
Hold the sauce in a warm place until needed.
