Hot Browns - cooking recipe
Ingredients

1/2 c. butter
1/2 c. flour
2 c. milk
1 tsp. salt
2 egg yolks, beaten
6 slices cooked turkey breast
3 English muffins, split and toasted
1/2 c. grated Cheddar cheese
6 tomato slices
6 Tbsp. butter
2 Tbsp. brown sugar
6 slices bacon, fried crisp
1/2 c. sliced mushrooms, sauteed in 1 Tbsp. butter and 1 Tbsp. lemon juice
Preparation

Melt butter in saucepan; stir in flour.
Cook 2 minutes and add milk gradually.
Stir until thickened.
Season.
Add some of the sauce to beaten egg yolks, then return mixture to saucepan. Heat through and keep warm.
Arrange turkey on muffins.
Top each muffin with sauce, Cheddar cheese, 1 slice tomato, 1 tablespoon butter and a sprinkling of brown sugar.
(May be prepared ahead at this point and refrigerated.)
Before serving, broil 3 to 5 minutes or until lightly brown.
Garnish with bacon and warmed sauteed mushrooms.
Serves 6.
They are rich and delicious.
