Zesty Baked Catfish - cooking recipe

Ingredients
    1/2 c. fine dry bread crumbs
    1/2 tsp. dried whole tarragon
    1/4 tsp. lemon and pepper seasoning
    4 (4 oz.) farm raised catfish fillets
    3 Tbsp. commercial reduced calorie French dressing
    vegetable cooking spray
    1/2 c. (1 oz.) shredded Swiss cheese
Preparation
    Combine bread crumbs, tarragon and seasoning.
    Stir well. Brush fillets with French dressing.
    Roll in bread crumb mixture. Arrange fillets on rack of a broiler pan that has been coated with cooking spray.
    Bake, uncovered, at 450\u00b0 for 10 minutes. Sprinkle fillets evenly with cheese and bake an additional 2 minutes or until fish flakes easily when tested with a fork.
    Yields 4 servings.
