Miniature Holiday Cheesecakes - cooking recipe

Ingredients
    18 vanilla wafers
    3 (8 oz.) pkg. cream cheese, softened
    3/4 c. sugar
    1 Tbsp. lemon juice
    1/4 tsp. grated lemon peel
    3/4 tsp. vanilla
    3 eggs
    strawberry preserves
Preparation
    Place wafers flat side down on bottom of each 18 foil baking cups.
    Combine cream cheese, sugar, juice, peel and vanilla, mixing at medium speed with electric mixer until blended.
    Add eggs, one at a time, mixing well.
    Pour into baking cups, filling each cup almost full.
    Bake at 325\u00b0 for 25 minutes.
    Cool before removing from pan.
    Chill.
    Top with preserves.
    Yields 18 servings.
