Low Fat Mayonnaise - cooking recipe

Ingredients
    2 eggs
    3/4 tsp. salt
    1/2 tsp. paprika
    1/4 tsp. dry mustard
    3 Tbsp. lemon juice
    1/2 c. skim milk
    1 Tbsp. vegetable oil
Preparation
    Beat eggs, salt, paprika and dry mustard in top of double boiler.
    Gradually add lemon juice and milk, stirring constantly. Cook until thick, at least 3 minutes.
    Remove from heat and stir in oil.
    Pour into jar, cover and refrigerate.
    Stir before serving.
    Makes 1 c.
    1 Tbsp = 20 calories.
