Old Fashioned Chicken Noodle Soup - cooking recipe

Ingredients
    1 hen or large, heavy fryer
    2 to 3 qt. water
    2 or 3 celery ribs
    1 small onion
    2 green onions
    2 or 3 sprigs fresh parsley
    salt and pepper to taste
    1/2 tsp. whole peppercorns
    1/2 tsp. allspice (whole)
    1 bay leaf
    thin egg noodles, blanched and rinsed
Preparation
    Combine all ingredients, except noodles, in large pot and cook about 1 1/2 to 2 hours.
    Skim off the foam that develops when hen comes to a boil.
    Remove chicken and strain broth.
    Remove grease from top of broth, using a ladle, or chill broth until fat congeals, then remove. (I like to use one of those pitchers which allows you to pour off the broth and discard the grease.)
