Baked Eggplant - cooking recipe

Ingredients
    2 medium eggplant
    5 eggs
    1 1/4 c. milk
    salt and pepper to taste
    3 1/2 c. cracker crumbs
    3 c. American cheese, grated
    1 1/2 c. margarine, melted
Preparation
    Peel, slice and boil eggplant until tender.
    Drain in colander 10 minutes.
    Put in bowl.
    Add eggs, milk, seasoning and half of crumbs, cheese and margarine.
    Pour into baking dish having mix about 1 inch thick.
    Sprinkle top with remaining crumbs and margarine.
    Bake at 450\u00b0 for 20 minutes or until firm.
    Yields 8 to 10 servings.
