Microwave Lemon Chicken And Rice - cooking recipe

Ingredients
    1 lb. boneless, skinless chicken breasts, cut into 1/2-inch cubes
    1 1/2 c. Minute original instant rice
    1 1/2 c. chicken broth
    1 medium red pepper, cut into strips
    1 medium zucchini, thinly sliced
    3 Tbsp. fresh lemon juice
    2 Tbsp. margarine or butter
    1 Tbsp. cornstarch
    1/2 tsp. garlic powder
    1/2 tsp. grated lemon peel
Preparation
    Mix all ingredients in 2-quart microwavable casserole; cover. Microwave on High for 5 minutes.
    Stir; cover.
    Cook 3 minutes or until chicken is cooked through.
    Stir; cover.
    Let stand 5 minutes.
    Fluff with fork.
    Garnish with chopped parsley.
