Chow Chow - cooking recipe

Ingredients
    2 pecks chopped green tomatoes
    8 chopped bell peppers (include 1 or 2 red peppers, if available)
    salt
    2 qt. vinegar
    4 Tbsp. dry mustard
    4 Tbsp. celery seed
    2 Tbsp. turmeric
    1 qt. chopped onion
    7 c. sugar
Preparation
    Sprinkle
    green tomatoes and bell peppers with salt and let set
    overnight.
    Drain
    well.
    If
    too
    salty, rinse with water. Mix vinegar, dry mustard, celery seed, turmeric, onion and\tsugar together.
    Combine\tall
    ingredients in large pan. Bring to
    a slow boil.\tSimmer over very low heat for about 20 minutes.
    Do not overcook.
    Pack in hot jars and seal.
