Zucchini Relish - cooking recipe

Ingredients
    10 cups zucchini (grated)
    4 cups onions (grated)
    4 cups red and green peppers (grated)
    5 tablespoons iodized salt
    2 1/4 cups apple cider vinegar
    5 cups sugar
    1 teaspoon nutmeg
    1 teaspoon dry mustard
    1 teaspoon turmeric
    2 teaspoons cornstarch
    2 teaspoons celery seed
    1/2 teaspoon pepper
    1 jar diced pimentos (optional)
Preparation
    Cook for 30 minutes and put in jars and seal.
    Makes 8 pints.
